    What is cilantro or coriander?

    Cilantro seed or leaves

    • Coriander leaves and coriander seeds are not interchangeable. They have a completely different taste and texture.
    • Whenever possible, always use fresh leaves for dishes made with coriander leaves.
    • Coriander seeds are usually roasted before grinding to fully extract the aroma.

    1. Fresh cilantro

    Fresh cilantro can be stored in a refrigerator:

    • In a closed container with water – 14-15 days.

    2. In dried form

    Dried cilantro should be stored in containers with good ventilation or in plastic bags with a lock, from one to two years.

    3. Frozen

    The shelf life of frozen cilantro is determined by the method of freezing:

    • Cilantro frozen without any additives can be stored for two months.
    • Cilantro frozen in vegetable oil is suitable for use for three months.
    • Cilantro frozen in butter should be consumed within a month, and if the butter has already been thawed and put back into the refrigerator, cilantro should be consumed over the next five days.

    How to store chopped cilantro?

    Cilantro is a delicate plant, and its conservation is not always a simple process. At the same time, there are ways to preserve its valuable qualities for the long term.

    1. In the fridge

    Freshly picked and cut cilantro can be stored in the fridge for maintaining its freshness for a longer period of time. You can keep the cilantro in the ridge using the methods below:

    Method 1: Using wet paper towels

    To preserve greens with wet paper towels, you need to do this:

    • With kitchen scissors or a sharp kitchen knife, cut each stem of the plant, cut off the dried ends, as well as remove all damaged or fading parts.
    • Place the processed greens in a wide and low container and fill with water, but so that it covers all the stems.
    • Leave for 5-10 minutes to soak. This procedure soaks the plants with water and removes debris and dirt from them.
    • Remove the greens from the water and transfer them to a salad dryer (if there is none, you can dry the product with layers of paper towels).
    • It is not necessary to achieve absolute dryness, the main thing is that there should be no drops of water on the green.
    • Spread the dried coriander on a piece of a damp paper towel. The size of the segment is determined so that it is possible to wrap a bunch of greenery from all sides. Wrap a bunch of greens on all sides with a damp towel.
    • Place the wrapped greens in a plastic bag or in a sealed plastic container. Close and mark the packaging with the date of storage and a description of the contents.
    • When packing, the following nuances must be taken into account. When placing in a plastic bag, you should leave about 2.5 cm of the upper part empty, squeeze out the air and complete the packing by placing it in an airtight container.
    • It is necessary to monitor the density and reliability of the fit of the lid. Send it to storage in the refrigerator.
    • The paper towel that wraps the greens sent for storage should not be wet, only slightly moist.
    Method 2: Using dry paper towels

    A method for storing coriander with dry paper towels involves the following:

    • Rinse and sort out the greens, removing damaged and old fragments of stems. With kitchen scissors or a sharp knife, completely trim the dried ends.
    • Using a salad dryer or paper towels, completely dry the greens. The best option is to spread the cilantro on a towel for several hours so that it remains in the open air, but excluding direct sunlight.
    • Cover the bottom and walls of the sealed plastic container with a sheet of a dry towel. Place cilantro on top with one layer and cover with another layer of towels. Alternate layers of greens and towels until the container is full, but so that the towel is at the top.
    • Tightly and securely close the container and send it to the refrigerator. During the entire period of storage in the refrigerator – periodically check the product, inspecting it through the transparent sidewalls, or opening the container for a very short time.
    • Withered or discolored greens should be removed. If any moisture occurs inside the container, the container should be dried and the cycle of laying the greens for storage should be repeated.
    Method 3: use of vegetable oil

    Save cilantro by freezing in vegetable oil as follows:

    • Prepare a blender and ice molds. The greens are finely chopped (up to 3 cm) and poured into a blender.
    • Then vegetable oil is poured there at the rate of 80 ml per 50 g of chopped seasoning.
    • In a blender, everything is mixed to a state of puree mass.
    • After that, the resulting composition is placed according to ice tins (but the tins are not completely filled with the composition, because the volume of the composition will increase upon freezing).
    • Molds with the product are sent to the freezer.
    • After freezing, formed cubes are laid out in plastic bags and stored in a freezing chamber.
    Method 4: use of butter

    The method for freezing the cilantro in butter are as follows:

    • Grind the coriander and soften butter.
    • Mix the prepared ingredients in the proportion: 3 tablespoons of cilantro per 100 g of oil. If desired, add a little garlic, pepper, lime zest, other seasonings, or herbs to taste.
    • Place a well-mixed composition on parchment paper or foil and then wrap in the form of a roll.
    • The resulting product is placed in the refrigerator for 2-3 hours to completely solidify the oil.
    • After the specified period, remove the product, place it in a bag of polyethylene and place it in the freezer compartment of the refrigerator or in the freezer.
    • Using this method will give coriander a special taste and aroma. Coriander preserved in this way can be used in the preparation of meat or fish dishes, as well as a variety of sauces.
    Method 5: ice cube molds

    This method can also be used to store the chopped cilantro in the freezer:

    • Put the cilantro in a colander and put it in the sink. Run water over the herbs while shaking the colander to wet all the strands. Close the tap and let the cilantro drain for a few minutes.
    • Gently dab them with a paper towel to remove all the water from their surface. Do not rub them, as you may tear the leaves.
    • You can also wrap the strands in absorbent paper and wrap it gently on itself to absorb all the water.
    • Place the strands on a cutting board and chop them with a sharp knife. Also, cut the stems. If you prefer, you can put the herbs in a food processor and chop them that way.
    • Be careful not to cut your fingers when cutting the cilantro.
    • Put a tablespoon of chopped cilantro in each imprint of an ice cube tray. This way, you will know the quantities that you will take out when you want to use them.
    • Take a tablespoon of chopped herbs and put them in an ice cube pan. Repeat the process for each mold until there is no more coriander. If the plate is full and there is coriander left, use another plate.
    • Fill the remaining space in each ice cube tray with water so that all of the cilantro is caught in the ice. Pour the liquid into the molds using a spoon or a glass.
    • Do not run the water into the molds directly from the tap, as it may overflow and cause you to lose some of the herbs.
    • Keep the ice cubes in the freezer for 2 months. Put the baking sheet somewhere where it won’t tip over until its contents are completely frozen. When the ice cubes are solid, you can put them elsewhere in the freezer.
    • You can keep the herbs in the molds for about 2 months.
    • When you want to use coriander, simply unmold an ice cube and thaw it.
    • The advantage of this method is that the greens are already divided into portions and you do not have to thaw all of the coriander.
    Method 6: using salt

    The cilantro can be preserved using salt only. Follow the steps given below:

    • Fill the glass to the brim with vegetables in a proportion of 100 g coriander 20-25 g salt and squeeze the contents until juice appears. Cork with a lid and keep it in the fridge for 10 months. Don’t forget that the spice already contains salt. Therefore, reduce the amount of salt in the bowls.


    This method allows you to save a special spicy smell of the plant. There are two ways to dry: naturally or in the oven.

    Method 1: Naturally

    To dry cilantro in a natural way, you must:

    • Carefully sort the plant, removing the leaves with damage and inedible grass. Rinse the selected cilantro under running water and dry it with a paper towel.
    • Cut the dried plant into large pieces – if finely chopped, the coriander can dry out too much during the drying process.
    • Cover the selected flat surface (pallet, board, etc.) with paper and spread the spice on top with one layer. For drying, transfer the surface with coriander to a dry, with adequate air circulation, sheltered from direct sunlight.
    • Periodically (once a day) the spice should be mixed by hand. Natural drying of coriander will take from two to seven days. This method preserves the taste of the spice, allows you to save its smell and vitamins.
    Method 2: in oven

    To prepare and dry the greens in the oven, do the following:

    • Sort cilantro and wash under running water. Dry the selected and washed coriander on a paper towel and cut it into large pieces.
    • Preheat the oven to 120 ° C.
    • Oil a baking sheet to prevent the herbs from sticking to its surface. Then distribute the coriander leaves over them in a single layer. If necessary, use multiple baking sheets. If you pile the herbs, they will not dry properly.
    • Put the plate in the oven for 20 to 30 min. The heat will dry the leaves to preserve them. Watch them while they are on the device. They will lose their bright green tone, which is normal, but they should not brown or burn. If this starts to happen, remove them from the oven or lower the temperature of the appliance
    • Let the coriander cool. When the leaves are dry, remove the baking sheet from the oven and place it on the stove for a few minutes while it cools.
    • Protect yourself with an oven glove to avoid burning yourself.
    • Scrape the plate with a spatula to detach the coriander leaves and put them in an airtight jar. They will be very brittle. Be careful not to lose any. Store the jar in the cupboard with the other spices while waiting to use its contents.
    • Close the windows and turn off the ventilation for this step, because a gust of wind can cause all the dried coriander to fly to the ground.
    • In the right conditions, the dried coriander can be kept for a year or more. To keep it as long as possible, use an airtight container and store it in a cool, dark closet, out of the sun. Whenever you use its content, put it away as soon as possible.
    • Dried leaves don’t spoil, but they eventually lose their flavor. Test them from time to time. Take some dried coriander and rub it between your fingers, then smell and taste them. If the flavor and smell are very weak or absent, the herbs will no longer taste. Throw them away and dry others.

    Using vinegar and salt

    The vinegar and salt can also be used to preserve the chopped cilantro for a long time. Follow the steps mentioned below:

    • Bring the water to a boil and add salt and vinegar.
    • Wash green, cut into pieces of the correct size.
    • Arrange on sterilized glasses, but the green need not be pounded too tightly.
    • Pour the cilantro with the marinade and let them cool slightly.
    • Then pour a tablespoon of vegetable oil into each glass.
    • Then seal the coriander with plastic lids and keep in a cool place – cellar or refrigerator.

    In this way, you can store chopped cilantro for the long term for future use. the other possible method if you haven’t chopped your cilantro is to cut the root or the stems of the cilantro. Clean and wash properly and then dry the coriander with paper towels. Just make sure that don’t dab it with pressure as it may ton the leaves. Then put some clean water in the jar and put the cilantro in the jar. Then cover the upper part of the cilantro with the plastic cover.
